
Joan's Sausage and Peppers

One of my favorites as a child, if my mom was making this, it usually meant something special was about to happen - a family gathering of some sort, whether it was a party or just a backyard summer picnic. But why save it just for special occasions? It's super easy to have any night of the week. And having dinner together is always special.

6 Sweet Italian Sausage links
2 Yellow Onions, sliced thin
2 Red Bell Peppers, sliced thin
2 Green Bell Peppers, sliced thin
2-3 jars of Marinara Sauce
8 long rolls
Bring a large pot of water to boil. Place sausage links in water and boil for 30 minutes to render the fat a bit. Remove from water, cool 5-10 min., then slice into 1/4 inch coins.
In a large pot (I prefer to just wash out the pot I just used for the rest of it, thus cutting down on dishes to wash), pour in the marinara sauce, add in onions, peppers and sliced sausage. Bring to a boil, then simmer for at least an hour.
You can eat it either in a soup bowl with bread on the side, or as a sandwich on the long roll. Enjoy!
