Herb-Roasted Potatoes

Ingredients:
5-6 medium yellow potatoes (Yukon Gold)
Peanut Oil, Avocado Oil, or Coconut Oil
1 tsp. parsley
1 tsp. thyme
Salt and pepper to taste

Preheat oven to 400*F.
​
Cut potatoes in half, then cut each half into quarters. In a large bowl, place the cut potatoes. Drizzle with enough oil to coat well.
​
Sprinkle in herbs and seasoning. Toss to evenly coat the potatoes. I like to do this by hand.
​
Line a rimmed baking sheet with foil, and place potatoes on sheet with a flat side down. Cover with another sheet of foil.
​
Bake potatoes for 20 min., remove foil cover and bake for another 20 minutes.
​
